2 1/4 cups all purpose flour
2 lg eggs, beaten
2 tbsp light olive oil
2 tbsp granulated sugar
2 tbsp rich Sherry or Vin Santo or Alchermes
vegetable oil for deep frying
confectioners sugar for garnishing
Sift flour into a large mixing bowl, make a well in the center. Pour in beaten eggs, olive oil, sugar and Sherry. With a knife, combine then bring together with hands and kneed into a smooth ball. Wrap with plastic and chill for 1 hour.
Heat the vegetable oil to 350°F. Roll the dough thin, about 1cm and cut ribbons, 1×4 inches. Fry until golden brown and crisp. Let cool on paper towel and dust with confectioners sugar.
