The Grass is ALWAYS Greener on the Other Side UNLESS….

When I was working I thought how simple life was when I was a student. I reminisced on the lazy mornings (waking up at 10), skipped classes, and working at a mindless retail job. Ahhhh a life with little responsibilities, how I miss you!

Now as a student I recall and wished I had all the free time I used to have. Working 7:30 – 4:00 allowed me free evenings and weekends to do as my heart desired instead of constantly doing school projects.

The grass is always green on the other side. You will always chase it but you will never obtain it. The secret is to make your grass green. Reflect on the times when it was brown, yellow, growing, etc. Try to remember and enjoy the things you’ve overcome. Ask yourself why are you doing what you are doing and if it contributes to your end goal your grass will be greener. Reflecting will help you realize how far you’ve come. And, remember to celebrate your successes!

My first degree was in Cultural and Social Anthropology with a minor in Business.  My goal was to find something in HR or Marketing.  People always raised an eyebrow when I told them my direction because it didn’t make sense to them. I saw it loud and clear; Anthropology = people and business has to do with people…. anyway, I didn’t enjoy my time in school because I didn’t care for it (school was not a choice at that time) but I’m glad that I finished because it helped shape me and how I continue to see the world. I ended up becoming a Recruiter for 2ish years – which I didn’t realize was my goal because it was so routine and I was weighed down with stuff. I now realize how far I’ve come and how much I’ve accomplished that my grass can’t be brown.

Vegetarian Pho Recipe

Serves 10 – 15 people

Ingredients:

3 1/2 boxes of vegetable stock (500ml/box)
14 cups of water
1 medium size daikon radish, cubed
7 average size carrots, cubed
7 celery sticks, cubed
1 – 2 cups of vegetarian seasoning
½ – 1 cup of granulated sugar
2 – 5 Cinnamon sticks
3 – 7 Anise stars
3 packages of deep fried tofu cubes
2 – 3 packages of pho noodles

Egg yoke (optional)

Garnishments (optional):
3 stems of green onions, diced
½ bunch of cilantro, diced

Thai Basil
Bean sprouts**
Lime wedges

Hoisin sauce
Rooster (Sriracha) brand hot sauce

 

In a large stew pot, combine vegetable stock and water, bring to a boil.  Reduce heat to medium – high, add daikon radish, carrots, celery, 1 cup of vegetarian seasoning, ½ cup of sugar, 2 cinnamon sticks, and 3 anise stars.  Stew the ingredients for about 30 minutes and add the additional vegetarian seasoning, sugar, cinnamon sticks, and anise stars for additional flavor if necessary.  KEEP IN MIND that once the stock reduces the flavours will intensify.  Stew on medium to medium-high heat for about 4 hours or until vegetables are soft (like steamed vegetables).  If the broth is too salty, add hot water.  Add tofu about 30 minutes before serving so that it can absorb the broth.

If you are using dried pho noodles, soak them for a few hours so that when you use them they’ll cook faster.  If you are using fresh pho noodles, rinse them with cold water.

In a medium pot, fill it 2/3 full of water, bring to a boil.  Using a strainer that fits in the pot, place a generous handful of noodles and set in boiling water for about a minute or until cooked.  Strain the noodles and place into serving bowl.  Fill bowl with broth and vegetables.  Garnish with diced onions and cilantro.
**blanching bean sprouts is a preference and can help with digestion

I grew up eating pho without the egg yoke but it adds a nice richness that I recently experienced – Thanks Thy :)

How to Fold a Money Shirt

My first assignment = a new respect for IKEA instruction designers!
The assignment was two parts.  Part one was to draw instructions on how to fold the item selected (paper plane, etc).  Part two was the written instructions.  Sounds easy?  Sure does!  It’s not.  The instructions have to be separate of themselves, meaning they can’t be used to explain each other.  Each instruction must be able to communicate to the reader how to fold the item.

P.s. DON’T use your friends as test subjects after they’ve been drinking.  Piss poor planning!
